RECIPE: Truck Stop Gourmet

Not a lot of green in this photo, is there?  

I'm into keeping things simple and yes there is a show for that on Food Network.  Claire Robinson hosts 5 Ingredient Fix and my DVR never misses a show. 

I recently view the episode entitled Truck Stop Gourmet and thought that I would give all those recipes a try. 

The Bacon Cornbread was by far the best recipe in this bunch.  You can't go wrong with bacon, right?  The addition of creamed corn was a genius move.  This just might be my signature go-to cornbread going forward.

The Squash Casserole was a miss.  I guess because this is really a summer set of recipes and there was no fresh yellow squash in sight and I had to make do with frozen squash.  I will not be making this again in the middle of winter. 

The Chicken Fried Steak was pretty standard.  Pretty much how I make it anyway so no real surprise here.  My meat could have used a bit more tenderizing.

The Honey Whipped Butter was again pretty standard.  I am always experimenting with flavored butters.  This honey flavor did accompany the Bacon Cornbread very well.

As for the Lemon Pie Cookies, not enough lemon flavor.  Again probably due to the winter months and the poor selection of fresh lemons at my grocery store. I will try this recipe again in the middle of summer. 

The whole premise for this menu was to serve up some all time favorite truck stop food.  If this were MY menu, I would have included smashed potatoes and coconut pie and diesel fumes.
