RECIPE: Mexican (White) Wedding Cookies

It's the tenth day of Christmas y'all. 

This has been my fave batch of cookies to bake these last few days.  Not only are they delicious but they are also a cinch to bake.

This recipe is an old hand-me-down and you can expect great results from this deeply-guarded family tradition.

In Mexico, these cookies are called Polvorones.

1.5 cups powdered sugar

1 cup butter, softened

2 teaspoons Mexican Vanilla

2 cups all-purpose-flour

1 cup chopped nuts---I use pecans

.25 teaspoon salt

more powdered sugar

Pre-heat oven to 325 degrees.

Combine first three ingredients until creamed. 

Add the additional ingredients until you can form a stiff dough.

Shape into one inch balls.  

Place one inch apart on cookie sheet w/ parchment paper.

Bake 20 minutes.  

Roll warm cookies in additional powdered sugar.

Let cool.

Roll cookies again in powdered sugar.

Enjoy.

Makes 18 Texas size cookies.
