Tonight I made apple pie empanadas.  The dough recipe is here.  The filling recipe is here.   My past week’s work is here.  

Again, there is nothing more satisfying than an (hecho a mano) creation.  These empanadas are good.  I implore you to try your own variations. 

PS:  even on a hot summer night, I turned the oven on to experiment further with these hand pies---er---empanadas.

PPS:  Meatloaf would approve.
