As the Hatch Chile Festival wraps up @ Central Market, one more trip to the grocery story to pick up some roasted Hatch Green Chile. Love the scent of fresh chile as it roasts in the giant roasters.  Purchasing it this way is oh so much easier than roasting it yourself albeit a bit more pricey. 

Today I stuffed 11 bags to place in my brand new freezer.  I will have green chile throughout the winter.  

But the best kind of green chile is just cut up as a simple side dish.  Nom, nom, nom.
